Spicy Pumpkin Soup


INGREDIENTS
  • 1 kg butternut pumpkin
  • Olive oil
  • 1 onion, diced
  • 4 garlic cloves
  • 2 tsp ground cumin
  • 500 ml vegetable stock
  •  1 can coconut cream
  •  ¼ bunch coriander

INSTRUCTIONS
Step 1. Peel, deseed and roughly chop the pumpkin into pieces.
Step 2. Roast for 25 min at 200°C.
Step 3. Heat up oil in a saucepan, add onion, garlic and cumin, and cook until softened.
Step 4. Add roasted pumpkin, stock and coconut cream, then simmer for 10 minutes.
Step 5. Off the heat, add chopped coriander and blend to a smooth texture. Season to taste.
