Smoked chicken breast
Smoked chicken breast with sweet and sour cranberries sauce & coleslaw
● Chicken breast 1 kg
● Hickory chips 1 cup
● Olive oil
● Cried cranberries 1 cup.
● Orange juice 250 ml
● Brown sugar
● Balsamic vinegar 2 tbsp
● Carrot shredded 1
● Spanish onion sliced 1
● Spring onion chopped ½ bunch
● Shredded cabbage ¼
● Sliced cucumber 1
Method:
Step 1. Drizzle olive oil on the chicken breast with salt and pepper, pierce with a fork to allow Amor
even smoking.
Step 2. Using a smoker or a baking tray with a rack, smoke the chicken breast for half an hour with
the Hickory chips. Back at 180 degrees for 20 minutes.
Step 3. Prepare all the vegetables for the coleslaw and leave aside.
Step 4. Heat up the orange juice with dry cranberries, brown sugar and balsamic vinegar, Cook and
reduce till thickened.
Step 5. Serve
